Every hair dryer in the store is 1875 Watts but all the travel plug/wattage adapters only go up to 1600 Watts?

I'm going to England, and got an adapter to use my hair straightener and dryer, but the adapter says it only accepts wattages up to 1600. But every hair dryer I've seen is 1875 watts. Just don't use the highest drying temperature and your wattage will stay below 1600.
You don't say where you are from but please be aware that the nominal supply voltage in the UK is 220volts. Hope you have a great trip ;)
I honestly don't think you'll see much of a difference with a lower wattage hairdryer, but if you want to stick with the one you have, you do need to get a higher wattage adapter.
